 Caprese Recipe-Using Culinary Herbs


Caprese salad is simply a salad recipe that originated on the island of Capri.  
It is off the coast of Italy at the tip of the boot.   It uses the colors of the Italian flag. Red. Green. White.    It is delicious and healthy.     I really like basil and grew more sweet basil than any other herb.   I have been much healthier since I began following a more Mediterranean diet.   I use olive oil or butter to cook with.  I  use tons of herbs.  Olives.  Tomatos. Cucumbers.  Feta cheese. Greek yogurt.  Fish. Fennel. Lots of veggies and fruit.
Whole grains. Water. Coffee, Tea. and I use red wine to cook, but I cannot drink it right now. Eggs, avocados, garbanzos.  I have cut back on red meat.   My blood pressure is excellent.  My weight is down.  My energy is up. My cholesterol levels are perfect.   I am finding that adding savory herbs to cooking helps our whole family enjoy the meal more. We use less salt and  eat healthier all around.    Caprese is a very healthy salad and I adore it.  

3 large ripe tomatoes
1/2 package of fresh sliced mozzarella cheese 
( I use BelGioioso brand pre sliced)
coarse grind sea salt
coarse ground pepper
1 TBSP extra virgin olive oil
1 1/2 TBSP Balsamic glaze
2 fresh sprigs of basil leaves washed 

Medium salad plate


Directions: 

Slice and core tomatoes  into rounds
Arrange alternating layers of tomato with mozzarella slices
Add basil leaves
Drizzle with 1 TBSP olive oil
Sprinkle with  3 finger pinch of coarse sea salt
sprinkle with coarse grind black pepper
Drizzle lightly with Balsamic Glaze **
       
 Serves 4        

Below: Finished product plated up.  althier all around.    Caprese is a very healthy salad and I adore it.  


I am going to plant tons of basil this season for 2021.  Our entire family loves it. Gabriel will eat it by the handfuls!
